English edition. Scarce work. A French professional reference cookbook arranged with an alphabetical thumb index. The style of Le Repertoire is highly condensed, being a sort of aide-memoire for combinations of base ingredient, sauce, and garnish, as a codification of conventional cookery processes. Written by Louis Saulnier, a French chef and cookbook writer best known for this work. Translated by E. Brunet, an English writer and translator.

Condition

In the original full cloth binding. Externally, sound with light rubbing and minor bumping to the extremities. The odd small mark to the boards. Loss of the spine. Front hinge tender. Internally, firmly bound with pages XV/XVI loosening. Pages are very bright with the odd small spot. Light age toning to the extremities.
