Compiled by reputable French chef, writer and inventor Alexis Soyer, who describes his experience as head chef of the recently-founded Reform Club, the kitchens of which were the most talked-of in the country and at time one of the most popular tourist attractions. This volume dedicates a chapter to describing these kitchens, followed by adaptations of some of the recipes for home kitchens.
Illustrated with a portrait frontispiece, two folding plates (one being a view of the Reform Club kitchen), ten further plates and numerous in-text engravings. Collated, complete.
Condition
Bound in a later half morocco, with marbled boards. Externally, very smart, with scuffs to the marbled boards and minor fading to the spine. Bookplate of one R. Richards to the front paste down. Internally, firmly bound. Pages are generally bright and clean, with scattered spotting to the first and last few pages. The occasional spot throughout. Slight offsetting to the title page caused by frontispiece. With a small closed tear to the folding plate.
